I love authentic organic sourdough bread, the traditional levain bread that was common centuries ago before yeast was developed. Yeast makes quick and easy bread, but sourdough provides the unique fermented taste and the strong chewy texture.

I make a wide range of sourdough breads include white, whole wheat, spelt, rye, rye with lavender, Kamut flour. Choose among many flavourings with tomato and oregano, black olives, sunflower, or sesame. Beau's IPA, puumpernickle, cheddar cheese, chocolate and cranberries, raisin and almond, French baguette, ciabatta, multigrain, dates and walnuts, bagels, pita, Ezekiel, chocolate and orange rind, chocolate and hot peppers. I also have non-gluten sourdough bread, a Keto bread, regular or non-gluten nut butter tarts. Since I run a small bakery, I also offer my ingredients for sale for home use: organic flours, nuts, seeds, dried fruit, and other ingredients.

Tom's Pantry bakes one day per week to match the schedule of a farmers market or other special event.
- The Vankleek Hill farmers market, at the Champlain Day Care Center, Saturdays starting June 20th. I will attend bi-weekly starting June 27th. Pre-order and public browsing.
- The Parkdale Farmers Market, 366 Parkdale Ave in Ottawa. I will attend bi-weekly on Thursdays starting June 18th. My products are available at Parkdale strictly on a pre-order pre-pay pickup situation.
